Sometimes it’s hard to sneak vegetables into your diet. It seems like there’s only so many ways to eat them. And even harder, is fulfilling that craving you have for a sandwich. Nori rolls (seaweed paper) is the solution! Just like a sandwich, the possibilities in this one are endless. Above, you’re seeing arugula, raw asparagus, avocado, cucumber, prosciutto, and on the edge to hold the roll together is a combination of tahini, honey, and lemon juice. That’s all the sauce on the plated version down below. I’m only going to write the recipe for the sauce now that I’ve put the nori roll idea into your head. Oh, and you don’t need some silly bamboo mat to roll these. Just use your hands. And if you don’t have a sharp knife to cut it, just make a cone shaped hand-roll instead.

lemon honey tahini dressing:

  • 1 tablespoon tahini
  • 1 tablespoon honey
  • 1 tablespoon lemon juice

whisk to combine.
