The end of summer means a few things: 1) exciting new seasonal produce to experiment with, but 2) no more delicious cherry tomatoes, cucumbers, and haas avocados to make salads from. But, while you can, I’d highly recommend throwing this combo together or something similar depending on what’s in your fridge. It’s quick, easy, and delicious. And best of all, it’s a salad that doesn’t rely on monster pieces of lettuce. It’s meatier and will fill you up.
- baby arugula
- 1/2 haas avocado
- handful cherry tomatoes
- 2 cooked turkey breasts, chopped
- 1/2 seedless cucumber, cut into strips lengthwise and then chopped
- 2 slices prosciutto de parma
For the dressing, I did a 1:1 combo of L’olivier passion fruit vinegar and a fruity olive oil.
